Cowboy Candy

You haven’t had a burger until you’ve topped it with this sweet and spicy treat! Also called candied jalapeños, it is the ultimate condiment for tacos, burritos, eggs, and more! It’s even great as an appetizer poured over whipped cream cheese and paired with your favorite cracker. The heat isn’t overpowering so even those who can’t handle spicy foods will come back for more.

Ingredients

  • 3 pounds jalapeños, thinly sliced
  • 2 cups apple cider vinegar
  • 4 cups sugar
  • 2 teaspoons salt

Directions

  1. Wearing gloves to protect your hands, rinse jalapeños then remove tops and slice into thin rounds. Set aside.
  2. In a large pot, combine sugar and apple cider vinegar on medium heat and bring to a boil.
  3. Once boiling, add jalapeños, bring back to a boil and simmer for 5 minutes.
  4. Ladle jalapeños into clean jars, leaving 1/4 inch headspace.
  5. Wipe the rims of the jars with a clean, damp paper towel and place a new canning lid and ring finger-tight.
  6. Place in a water bath canner, ensuring jars are covered with at least 2 inches of water, and boil for 10 minutes.
  7. Turn heat off canner and let jars cool in water bath for 5 minutes.
  8. Remove jars from the canner and set them on a clean kitchen towel for 24 hours.
  9. Once cool, remove rings, check seals, wipe down jars, and store in pantry.

Pro Tip: Once you finish a jar, any leftover juice can be used in chicken marinades, in salad dressing recipes, coleslaw, a spicy bloody mary, and more!

Instant Pot Greek Yogurt

You haven’t tasted Greek yogurt until you make it in your instant pot! It’s absolutely the creamiest and most delicious yogurt and very easy to make and EASY to make. All it takes is two ingredients and a little patience!

INGREDIENTS:

  • 8 Cups Milk (I use 2%)
  • 2 Tablespoons of Yogurt Starter
    • Any plain yogurt from the grocery store that lists active cultures will work

DIRECTIONS:

  1. Pour the milk into the Instant Pot’s insert. Press the “Yogurt” button, then press “Adjust” so the digital readout says “Boil” or “HIGH.” Depending on your model, it will either say BOIL or HIGH. This step takes about 30 minutes and will boil the milk by bringing it to 180 degrees. Once finished, Instant Pot will say YOGT.
  2. Allow boiled milk to cool either by removing insert pot and setting on a counter to cool or leaving in the instant pot. You want it to cool to ~110F so you can add the live culture yogurt without killing it.
  3. Mix 2 Tablespoons of yogurt and add about 1/2 cup of the warm milk and mix until smooth. Pour into warm milk.
  4. Set the insert of milk back in the Instant Pot place glass lid on top and press YOGURT. Depending on your model, you’ll need to press “adjust” and change the setting from “HIGH” to “MEDIUM.” After that, if the readout does not say “10:00,” add time using the + button until it does.
  5. The Instant Pot will incubate your yogurt for 10 hours before switching itself off (the display will read “Yogt” once the 8-hour default programming is complete). You can use the +/- button to adjust the incubation time. The longer the time, the more “sour” it gets. If you prefer a lighter yogurt then adjust to 8:00 hours.
    • Note that, when incubating yogurt, the timer counts up (when pressure cooking with your Instant Pot, the readout counts down) so it can be confusing. Once finished, it will switch to WARM.
  6. Once complete, allow to come to room temperature and then place insert directly in the the refrigerator for at least 6 hours.
  7. Once chilled, you can eat this as yogurt, or to make Greek yogurt strain it through a cheesecloth or clean kitchen towel to separate the whey. Simply line a colander with cheesecloth or clean towel over a bowl and place in refrigerator for several more hours or overnight. What remains will be thick and delicious Greek yogurt.

BONUS: don’t throw out the whey! It can be used in place of buttermilk in pancakes, waffles, pie, etc.

Instant Pot French Onion Soup in 20 Minutes!

This is truly the best French Onion soup and the best part is that it takes only 20 minutes!

INGREDIENTS:

  • 4 tablespoons butter
  • 4 large onions
  • 1 tablespoon light brown sugar
  • 4 cups beef broth
  • 1 cup dry red wine (I used Pinot Noir)
  • 1 teaspoon fresh or dry thyme
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon pepper

Optional Topping:

  • Croutons
  • Favorite melting cheese such as provolone, Swiss, Gruyere slices

DIRECTIONS:

1. Slice onions and set aside. Turn on sauté mode on Instant Pot and melt the butter until it sizzles.

2. Add the onions and brown sugar and stir regularly for about 10-15 minutes or until the onions have cooked down by about half and have become translucent.

3. Add the broth, red wine, balsamic vinegar, thyme, garlic powder, salt, and pepper. Give it a stir and secure the lid. Hit “Manual” or “Pressure Cook” for 8 minutes. Quick release when done.

4. Layer the croutons on top of the soup then cover with 1-2 slices of cheese. Cheese will melt on its own or you can broil individual servings in crocks.

{No Churn} Mint Chocolate Irish Cream Ice Cream

With St. Patty’s Day festivities in full swing, I decided to try an Irish twist on a homemade ice cream recipe I adapted from The Roasted Root. The Irish twist, of course, being Irish Cream whiskey.

First off, this is a super easy recipe. I mean EASY. You can whip up the mix in literally two minutes, requires no churning, no ice cream maker, egg yolks, rock salt. None at that nonsense. And it’s fluffy. Seriously fluffy. No one will believe you that you didn’t buy it from some fancy artisan creamery or spend hours cranking the churn. It’s really that good. Just whip up the cream, add a few simple ingredients, and freeze. With the booze addition, I do recommend prepping this recipe a day before because it can take a bit longer to set up. This is the perfect adult St. Paddy’s recipe but can also be enjoyed year-round!

{No Churn} Mint Chocolate Irish Cream Ice Cream

Ingredients:

  • 2 cups (1 pint) heavy cream
  • 1 14-ounce can sweetened condensed milk
  • 1/4 cup 2% milk
  • 3/4 cup Irish Cream whiskey
  • 1 vanilla bean pod, scraped OR 2 teaspoons pure vanilla extract
  • 1 cup of mint chocolate chips (optional)
  • Green food coloring (optional)

Directions:

1. Whip heavy cream until stiff peaks appear.

Rainbow Easter Egg Nests

On a recent drug store visit, I was quickly sidetracked by the adorable Easter section. Pastel, glitter, and cute bunnies had completely taken over aisle three! Inspired by the sweeties, I thought up a fun treat to make for the kiddos, an Easter or Spring party, or just because!

The idea for this recipe is super simple–make a batch of Rice Krispies Treats, line them into a cupcake tin to create the nests. Sprinkle with coconut dyed with green food coloring for the grass, hide a few candy eggs in the nests, and top with a Peep.

Step-by-step directions are below!

Rainbow Easter Egg Nests – Makes 24 Nests

Ingredients:

For the Rice Krispies Treats Nests

  • 6 cups Rice Krispies cereal
  • 3 tablespoons butter
  • 1 package (10 oz., about 40) marshmallows OR 4 cups mini marshmallows

For the “grass” filling:

  • 2 cups of coconut
  • green food coloring

Candy decorations:

  • (2) 4 ounce packages of Whoppers mini Robin Eggs (or your favorite egg-shaped candy)
  • (3) packages of Easter peeps

Directions:

To make nests:

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted then remove from heat.

2. Add Rice Krispies cereal and stir until well coated.

3. Working quickly and being careful not to handle while it’s too hot, Use buttered hands or wax paper to evenly press approximately 1/2-2/3 cup of mixture into two buttered muffin pans. Cool.

4. Pop the nests out of the muffin pans and line on a cookie rack.

To make coconut “grass”:

1. Place coconut in a bowl, add a few drops of green food coloring, and stir with a fork until incorporated and mixture looks like grass.

Decorate!

Sprinkle a tablespoon of the coconut “grass” in the nest, hide a few eggs on top, and nestle an Easter peep on top. You’ll have plenty of extra grass so use it to decorate your display!

What a difference a century makes!

With the start of a new year, I thought it might be fun to do something a little different and take myself (and possibly you) on a fun history lesson. Instead of looking at what the most popular fashions, music, and fashion were from 2015 or predicted for 2016, why not look at what was popular a hundred years ago? So here’s a fun little list of the most popular fashions, foods, and music “pins” from 1916.

So what was life like in 1916? To start, the United States had just entered World War I, unlike anything the world had ever experienced before. Patriotism in the U.S. was at an all-time high and citizens were encouraged to help with the war effort by enlisting, planting gardens to help with the diminishing food supplies, purchasing war bonds, and much more. Women and African Americans were encouraged for the first time in our nation’s history to work the types of jobs that had typically only been offered to White men.

The biggest hit of 1916 was M-O-T-H-E-R (A Word That Means the World to Me) by Henry Burr. The song was on the U.S. Billboard’s coveted #1 slot for 11 weeks!

With women entering the workforce, uniforms became quite the novelty and even little girls would sew uniforms for their dolls. The U.S. saw women’s hemlines shorten to allow for more movement when working and helping support the war effort and hairstyles also started to shorten. Despite the war, women’s fashion grew while becoming more practical. Even though corsets were still worm by most women clothes became less fitted.

The most popular movie of the year was D.W. Griffith’s “Intolerance” which cost $385,907 to make, considered one of the most expensive movies at its time.

Amazing how much has changed in 100 years and yet a lot is very much the same–we still come together as a nation during war and still love to cook delicious recipes for our families, wear the latest fashions, watch movies (now talkies in color!) and listen to music. Here’s to another 100 years!

Cilantro Lime Cream Sauce

plated foodWhether I’m making fish tacos, chicken enchiladas, or spicy shredded beef tacos, I always pair my Tex Mex with salsa! I like to play around with my salsa pairings, sometimes going traditional tomato or mixing it up with pineapple or mango. What’s become a staple on Tex Mex nights is this spicy cilantro cream sauce concoction. This simple sauce is super simple to throw together but packs some serious flavor and completely replaces the need for a dollop of sour cream. I usually make a double batch so I can use it as a dressing to drizzle over taco salads the next night.

  • 4 ounces (1/2 a package) cream cheese
  • 3 Tablespoons sour cream
  • 1 lime, zested and juiced
  • 1 garlic clove
  • 1 bunch fresh cilantro (use more or less to suit your taste)
  • 1/4 small jalapeño, seeded (optional)
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh black pepper
  • 1/4 teaspoon cumin

Directions (SUPER SIMPLE!)

1. Combine all of the ingredients in a blender or food processor and blitz until smooth and creamy!
