33 Crock Pot Recipes You Can’t Live Without

Whether it’s pot roast, spicy meatballs, chili, or even chocolate pudding, the crock pot does just about everything. I use it at least once a week and will be forever grateful to my Mother for giving me my first crock pot when I graduated from college. Granted, there have been a few failures–usually due to forgetting I had something in the crock pot and arriving a few hours later than planned to a pot of mush–but there have been so many more delicious successes. So today’s post is a fun tribute to the crock pot and all of the yummy things you can do with it. Before I get started, I get this question a lot so I’ll go ahead and answer it now: What crock pot do I personally use and why? I have the Hamilton Beach Set ‘n Forget 6-Quart Programmable Slow Cooker. crockpotI’ve owned a couple over the years but this is my favorite for a couple of reasons. 1) It has little clamps so I can seal down the lid and not worry about sloshing if I’m transporting food in my car. Been there, done that, and it’s no fun cleaning chili out of the floor of your car in the freezing cold. 2) It’s programmable so for recipes that call for 8 hours of cooking time it means I don’t have to rush home because the timer setting just switches to WARM when it’s done. 3) It has a meat thermometer/probe so you can set the crock pot to switch to warm as soon as it reaches a certain internal temp. I actually first gave this crock pot to my Mom as a present but was so impressed by it that I scooped one up for myself.

Cranberry Gobbler Sandwich

Cranberry-GobblerI was in the mood for a really gourmet sandwich to make at home and this was the result. It’s pretty much the ultimate turkey sandwich and a great recipe to hold onto for after Thanksgiving. It features turkey, caramelized onions, melted brie, and cranberry mayo all squeezed between a buttery croissant. It’s a ridiculously tasty sandwich!

Cranberry Gobbler Sandwich
Number of Servings: 4

Ingredients

2 tablespoons butter
1 large onion, sliced into thin rings
Salt and pepper
¼ cup jellied cranberry
¼ cup mayonnaise
4 large bakery croissants, sliced in half lengthwise
12 ounces Wisconsin brie, sliced
8 ounces romaine lettuce
8 ounces honey baked turkey, thick-sliced

Directions:

1. Heat a skillet over medium high heat and add 2 tablespoons of butter. Add sliced onions to the melted butter, add salt and pepper, and sauté for several minutes until caramelized. Remove onions and set aside.

2. In a bowl, stir together jellied cranberry and mayonnaise. Smear each croissant half with 1 tablespoon of cranberry mayonnaise. Place 2 ounces of turkey on bottom of each croissant. Add 3 ounces of Wisconsin brie on top of the turkey and add a spoonful of caramelized onions on top.

3. Place croissant top halves onto each sandwich. Grill each sandwich in a lightly buttered pan for 2-3 minutes per side, until croissant is golden brown and brie is melted.

4. Remove sandwiches from the skillet and carefully remove tops of each sandwich. Add 2 ounces of lettuce and then replace the top and serve.

Kitchen Sink Salad

I’m not a salad person. At all. Sure, it’s fine when a little salad comes with my steak or spaghetti and meatballs but you’ll never catch me ordering a salad as my main. Unless it came with a side of fries. 🙂
So I’m not sure what happened but I’ve turned a new (wait for the pun) leaf. Maybe it’s spring in the air but I had this craving for the ultimate salad for dinner and I think I’ve got it in the bag. I gobbled it down as if it were a plate of spaghetti & meatballs though I wouldn’t have turned down the garlic breadsticks. Too delicious not to share!

Here’s what went into my Kitchen Sink Salad (makes 2 large salads):

  • 1 bag of mixed greens
  • 1/2 a cucumber, cut into rings
  • 2 roma tomatoes
  • 1/2 cup of corn
  • 1/2 cup of sliced olives
  • 1 cup of garlic & cheese croutons
  • 1/2 cup of shredded ghouda
  • 8 ounces of cubed ham
  • 8 ounces of sliced turkey

I made my own dressing but you can use any bottled variety as well:

  • 1 T. extra virgin olive oil
  • 2 t. balsamic vinegar
  • 1 t. red wine vinegar
  • 1 T. sugar
  • 1 t. fresh or dried parsley
  • 1 t. dill
  • 1 t. garlic salt

Mix together in separate bowl.

Toss the mixed greens in a large bowl with dressing. Plate the greens on two dinner plates then add all the toppings.
